- Ground turkey: 1 pound
- Sweet potatoes: 2 large, peeled and cubed
- Onion: 1 medium, chopped
- Bell pepper: 1, chopped (any color)
- Olive oil: 2 tablespoons
- Garlic: 2 cloves, minced
- Chili powder: 1 tablespoon
- Cumin: 1 teaspoon
Instructions
- Step 1: Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- Step 2: Heat olive oil in a large skillet over medium heat. Add ground turkey, onion, and bell pepper. Cook, breaking up the turkey with a spoon, until the turkey is browned and the vegetables are softened, about 8-10 minutes. Drain off any excess grease.
- Step 3: Stir in the minced garlic, chili powder, and cumin. Cook for another minute until fragrant.
- Step 4: Add the cubed sweet potatoes to the skillet and stir to combine with the turkey mixture.
- Step 5: Transfer the entire mixture to the prepared baking dish and spread evenly.
- Step 6: Bake in the preheated oven for 30-40 minutes, or until the sweet potatoes are tender and easily pierced with a fork.

- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For best results, reheat individual portions in the microwave or a skillet until heated through.
