- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 1/4 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
- Step 1: In a medium bowl, whisk together olive oil, Parmesan cheese, minced garlic, oregano, salt, and pepper.
- Step 2: Add the chicken cubes to the bowl and toss to coat evenly with the marinade. Let the chicken marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
- Step 3: Thread the marinated chicken onto skewers. If using wooden skewers, soak them in water for at least 30 minutes before using to prevent burning.
- Step 4: Preheat your grill to medium-high heat. Grill the chicken skewers for 4-5 minutes per side, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Step 5: Remove the skewers from the grill and let them rest for a few minutes before serving. Garnish with fresh parsley.

- Store leftover skewers in an airtight container in the refrigerator for up to 3 days.
- Reheat leftover skewers in a skillet over medium heat until warmed through, or quickly grill them for a minute per side to refresh.
