Delicious gooey chocolate caramel turtle cake roll recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup buttermilk
  • 1 cup caramel sauce
  • 1 cup semi-sweet chocolate chips
  • ½ cup chopped pecans

Instructions

  1. Step 1: Preheat oven to 375°F (190°C). Grease and flour a 15x10x1 inch jelly roll pan. Line the bottom with parchment paper, leaving an overhang on the long sides to help with rolling.
  2. Step 2: In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in the vanilla. In a separate bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  3. Step 3: Pour batter into the prepared pan and spread evenly. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  4. Step 4: Immediately invert the cake onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper. Starting from the short end, tightly roll the cake and the towel together. Let cool completely on a wire rack.
  5. Step 5: Once cooled, unroll the cake. Spread the caramel sauce evenly over the cake. Sprinkle with chocolate chips and chopped pecans. Reroll the cake gently.
  6. Step 6: Refrigerate for at least 30 minutes before slicing and serving.

Notes

  • Store leftover cake roll tightly wrapped in plastic wrap in the refrigerator for up to 3 days; its gooey goodness will last!
  • For a warm, decadent experience, gently microwave individual slices for 10-15 seconds to melt the chocolate and caramel slightly.
  • Serve this show-stopping cake roll with a scoop of vanilla bean ice cream for the ultimate sweet treat, a delightful contrast to the rich cake.
  • To prevent cracking, ensure your butter is truly softened and your eggs are at room temperature when creaming them together; this will create a smooth, pliable batter.
