Instructions
- Step 1: Preheat the oven to 375°F (190°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the long sides for easy removal.
- Step 2: In a large bowl, whisk together the flour, oats, brown sugar, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture forms coarse crumbs. Reserve about 1 cup of this crumb mixture for the topping.
- Step 3: Press the remaining crumb mixture firmly and evenly into the bottom of the prepared pan to form the crust. Bake the crust for 10 minutes until lightly set.
- Step 4: While the crust bakes, prepare the filling: Gently combine the diced peaches, well-drained crushed pineapple, and cornstarch in a medium bowl. Pour the fruit mixture evenly over the pre-baked crust.
- Step 5: Sprinkle the reserved 1 cup of crumb mixture over the fruit filling. Return the pan to the oven and bake for 30 to 35 minutes, or until the topping is golden brown and the fruit filling is bubbly.
- Step 6: Allow the bars to cool completely on a wire rack for at least 2 hours before lifting them out of the pan using the parchment paper overhang. Slice into bars and serve.
