Ingredients
- All-purpose flour: 1 1/2 cups
- Rolled oats: 1 cup
- Brown sugar: 3/4 cup, packed
- Baking powder: 1 teaspoon
- Salt: 1/4 teaspoon
- Unsalted butter: 1/2 cup (1 stick), cold and cubed
- Golden peaches: 2 cups, peeled and diced
- Pineapple juice: 1/4 cup
Instructions
- Step 1: Preheat oven to 375°F (190°C). Grease and flour an 8×8 inch baking pan.
- Step 2: In a large bowl, combine flour, oats, brown sugar, baking powder, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Step 3: Press half of the oat mixture firmly into the prepared baking pan.
- Step 4: In a separate bowl, combine the diced peaches and pineapple juice. Spread the peach mixture evenly over the crust in the pan.
- Step 5: Sprinkle the remaining oat mixture evenly over the peach filling.
- Step 6: Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbly. Let cool completely before cutting into bars.
Notes
- Store cooled bars in an airtight container at room temperature for up to 3 days, or in the refrigerator for longer storage.
- For a warm, comforting treat, gently reheat individual bars in the microwave for 10-15 seconds.
- Serve these bars with a dollop of vanilla ice cream or a sprinkle of powdered sugar for an extra touch of sweetness.
- To prevent a soggy crust, gently toss the diced peaches with a tablespoon of cornstarch before mixing with the pineapple juice to absorb excess moisture.
