Ingredients
- All-purpose flour: 2 1/4 cups
- Unsalted butter (softened): 1 cup
- Granulated sugar: 3/4 cup
- Large egg: 1
- Cotton Candy extract: 1 1/2 teaspoons
- Pink and blue gel food coloring: A few drops of each
- Edible holographic glitter or disco dust: 1 teaspoon
- Fluffy cotton candy (for garnish): 1 cup
Instructions
- Step 1: Preheat oven to 350°F (175°C). In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the egg and cotton candy extract until fully combined.
- Step 2: Gradually mix in the flour until a soft dough forms. Divide the dough into two equal halves. Color one half with the pink gel food coloring and the other half with the blue gel food coloring, kneading gently until the color is uniform.
- Step 3: Scoop alternating small dollops of pink and blue dough onto prepared baking sheets lined with parchment paper. Use a toothpick or small spatula to gently swirl the two colors together to achieve a marbled effect, then sprinkle the top of each cookie generously with the edible holographic glitter.
- Step 4: Bake for 9-11 minutes, or until the edges are lightly set and the center is still soft. Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Step 5: Once the cookies are entirely cool, gently pull off small tufts of fresh cotton candy and press them lightly onto the center of each cookie just before serving to maximize fluffiness and presentation.
Notes
- Store un-garnished cookies in an airtight container at room temperature for up to four days, remembering that the fresh cotton candy must be added just before serving.
- To restore the signature soft center, briefly warm un-garnished cookies in the microwave for just 5 seconds, being careful not to overcook them.
- For a fully enchanting dessert experience, pair these magical cookies with a glass of cold milk or a scoop of complementary vanilla bean ice cream.
- To ensure your "glow" swirls stay vibrant and distinct, gently fold and marble the pink and blue doughs only 2-3 times to avoid blending them completely into purple.
