Ingredients
- Mushrooms (cremini, button, or a mix) – 1.5 lbs
- Butter – 1/2 cup, melted
- Garlic – 4 cloves, minced
- Fresh Parsley – 1/4 cup, chopped
- Olive Oil – 2 tablespoons
- Dried Thyme – 1 teaspoon
- Salt – 1/2 teaspoon
- Black Pepper – 1/4 teaspoon
Instructions
- Step 1: Preheat oven to 400°F (200°C). Lightly grease a baking sheet with olive oil.
- Step 2: Clean the mushrooms by wiping them with a damp paper towel. If using larger mushrooms, halve or quarter them so they are all roughly the same size.
- Step 3: In a large bowl, combine the melted butter, minced garlic, chopped parsley, dried thyme, salt, and pepper.
- Step 4: Add the mushrooms to the bowl with the butter mixture and toss to coat evenly.
- Step 5: Spread the mushrooms in a single layer on the prepared baking sheet.
- Step 6: Roast in the preheated oven for 20-25 minutes, or until the mushrooms are tender and browned, stirring halfway through. Serve immediately.
Notes
- Store leftover roasted mushrooms in an airtight container in the refrigerator for up to 3 days.
- Reheat roasted mushrooms in a skillet over medium heat until warmed through, adding a touch more butter if needed.
- Serve these savory mushrooms as a delicious side dish with steak, chicken, or stirred into pasta.
- For extra flavor, let the garlic butter mixture sit for 10 minutes before adding the mushrooms to allow the garlic to infuse the butter fully.
