Delicious garlic butter beef bites with potatoes recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1.5 lbs Sirloin steak, cut into 1-inch cubes
  • 1 lb Baby Yukon Gold potatoes, quartered
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon kosher salt, plus more for seasoning
  • 1/2 teaspoon black pepper, plus more for seasoning
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Step 1: Par-cook the potatoes by boiling or microwaving them until slightly tender but still firm (about 7-10 minutes). Drain the potatoes well and set them aside, ensuring they are patted dry.
  2. Step 2: Heat 1 tablespoon of butter or oil in a large skillet or cast-iron pan over high heat. Season the cubed steak generously with salt and pepper. Sear the beef for 2-3 minutes, browning quickly on all sides. Do not overcrowd the pan; remove the beef and set aside on a plate.
  3. Step 3: Reduce the heat to medium. Add the remaining 3 tablespoons of butter and the minced garlic to the skillet. Cook for about 30 seconds until the garlic is fragrant, taking care not to burn it. Stir in the Italian seasoning.
  4. Step 4: Add the par-cooked potatoes to the garlic butter mixture. Increase the heat slightly and cook, stirring occasionally, for 5-7 minutes until the potatoes are golden brown and the edges are crispy.
  5. Step 5: Return the seared beef bites to the skillet. Toss everything gently to coat the beef and potatoes thoroughly in the garlic butter sauce. Cook for 1 minute to reheat the beef, then remove from heat, garnish with fresh chopped parsley, and serve immediately.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days, keeping in mind the steak's tenderness will diminish slightly upon cooling.
  • To restore the best texture and avoid rubbery beef, reheat the leftovers quickly in a 350°F oven or a hot skillet rather than using the microwave.
  • Balance the richness of the garlic butter by pairing these hearty bites with a bright side of steamed green beans or a crisp garden salad dressed in a lemon vinaigrette.
  • The most important step for crispy potatoes is ensuring they are bone-dry after par-cooking, otherwise they will steam in the butter instead of forming a golden crust.
