Instructions
- Step 1: In a medium bowl, combine the Greek yogurt, peanut butter, honey (or maple syrup), vanilla extract, and salt. Mix well until everything is evenly incorporated and smooth.
- Step 2: Gently fold in the mini chocolate chips and chopped peanuts (if using). Be careful not to overmix, as this can cause the chocolate chips to melt slightly.
- Step 3: Line a baking sheet or plate with parchment paper or a silicone mat.
- Step 4: Drop spoonfuls of the yogurt mixture onto the prepared baking sheet. You can use a small cookie scoop or a spoon to create even-sized bites.
- Step 5: Place the baking sheet in the freezer for at least 2 hours, or until the bites are completely frozen and firm.
