- Large Flour Tortillas: 8 count
- Thin-sliced Deli Roast Beef: 1 pound
- Sliced Provolone or Swiss Cheese: 8 slices
- Cream Cheese, softened: 4 ounces
- Mayonnaise (or sour cream): 2 tablespoons
- Dry Au Jus Gravy Mix (for filling): 1 tablespoon
- Dry Au Jus Gravy Mix (for dipping sauce): 1 envelope (or packet)
- Water (for dipping sauce): 2 cups
Instructions
- Step 1: Prepare the Au Jus Dipping Sauce. In a small saucepan, whisk together 1 envelope of au jus mix and 2 cups of water. Bring the mixture to a boil, then reduce the heat and simmer for 5 minutes until slightly thickened. Keep the au jus warm or reheat just before serving.
- Step 2: Prepare the Filling Spread. In a medium bowl, combine the softened cream cheese, mayonnaise, and 1 tablespoon of the dry au jus mix until the mixture is smooth and well combined.
- Step 3: Assemble the Roll-Ups. Spread an even layer of the cream cheese mixture across the entire surface of each tortilla. Lay approximately 2 ounces of roast beef and one slice of cheese over the spread. Starting at one edge, roll the tortilla up tightly.
- Step 4: Sear the Rolls. Heat a large skillet over medium heat. Lightly brush the seam side of the roll-ups with a little butter or oil (optional) and sear for 2-3 minutes per side until golden brown and the cheese is slightly melted.
- Step 5: Slice and Serve. Transfer the cooked rolls to a cutting board. Immediately slice each roll-up into 4-6 pinwheels (about 1-inch thick) and arrange on a platter. Serve immediately with the warm au jus dipping sauce on the side.

- For easy party prep, assemble the roll-ups completely and wrap them tightly in plastic wrap before refrigerating for up to 24 hours; sear them in the skillet just before guests arrive.

- Present the warm au jus dipping sauce in individual small ramekins beside the sliced roll-ups for personal dipping, or serve in one larger bowl garnished with a touch of fresh parsley.
