- 2 Chicken breasts (about 6 oz each)
- 1 tbsp Olive oil
- 1/2 tsp Garlic powder
- 1/4 tsp Paprika
- 1/4 tsp Salt
- 1/4 tsp Black pepper
- 1 Lemon, cut into wedges
- 1 cup Broccoli florets
Instructions
- Step 1: Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- Step 2: Place chicken breasts in the prepared baking dish. Drizzle with olive oil.
- Step 3: In a small bowl, combine garlic powder, paprika, salt, and pepper. Sprinkle the mixture evenly over the chicken breasts.
- Step 4: Arrange broccoli florets around the chicken in the baking dish.
- Step 5: Bake for 20-25 minutes, or until the chicken is cooked through and the broccoli is tender. Chicken internal temperature should reach 165°F (74°C).
- Step 6: Serve immediately with lemon wedges.
Notes
- Leftovers will keep in an airtight container in the fridge for up to 3 days, perfect for a quick lunch.
- For best results, reheat chicken and broccoli in the oven at 350°F (175°C) to keep the chicken moist.
- A sprinkle of red pepper flakes adds a nice kick if you like a little heat with your lemon-kissed chicken and broccoli.
