Ingredients
Scale
- 1 cup rolled oats
- 1/2 cup peanut butter (or other nut butter)
- 1/2 cup honey or maple syrup
- 1/4 cup chia seeds
- 1/4 cup shredded coconut (unsweetened)
- 1/4 cup mini chocolate chips
- 1/4 cup chopped nuts (almonds, walnuts, pecans)
- 1 teaspoon vanilla extract
Instructions
- Step 1: In a large bowl, combine rolled oats, peanut butter, honey/maple syrup, chia seeds, shredded coconut, mini chocolate chips, chopped nuts, and vanilla extract.
- Step 2: Mix thoroughly until all ingredients are well combined and a sticky dough forms. If the mixture is too dry, add a tablespoon of water at a time until it comes together. If it's too wet, add more oats.
- Step 3: Using a tablespoon or a small cookie scoop, roll the mixture into bite-sized balls (approximately 1 inch in diameter).
- Step 4: Place the energy bites on a parchment-lined plate or baking sheet.
- Step 5: Refrigerate for at least 30 minutes to allow the bites to firm up. This helps the ingredients bind together and creates a more enjoyable texture.
- Step 6: Once firm, store the energy bites in an airtight container in the refrigerator for up to a week. For longer storage, freeze them.
