Instructions

  1. Step 1: Combine the chopped apples, granulated sugar, lemon juice, and water in a large, heavy-bottomed pot.

  3. Step 3: Reduce the heat to medium and continue to cook, stirring frequently, until the mixture thickens and reaches a jam-like consistency. This will take approximately 45 minutes to 1 hour. Skim off any foam that forms on the surface.
  4. Step 4: Stir in the ground cinnamon and nutmeg during the last 5 minutes of cooking.
  5. Step 5: To test for doneness, place a small spoonful of jam on a chilled plate. If it wrinkles when you push it with your finger, it is ready.
  6. Step 6: Carefully ladle the hot jam into sterilized jars, leaving 1/4 inch headspace. Process in a boiling water bath for 10 minutes.
