  • 1 tablespoon lime juice
  • 1 tablespoon grated ginger
  • 1 clove garlic, minced
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 1 cup bamboo skewers, soaked in water for at least 30 minutes

Instructions

  1. Step 1: In a large bowl, whisk together the Thai red curry paste, soy sauce, brown sugar, fish sauce, lime juice, ginger, and garlic. Add the chicken cubes and toss to coat evenly. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  2. Step 2: Preheat your grill to medium-high heat.
  3. Step 3: Thread the marinated chicken and bell peppers and red onion pieces onto the soaked bamboo skewers, alternating the ingredients.
  4. Step 4: Grill the skewers for 4-5 minutes per side, or until the chicken is cooked through and the vegetables are tender. Basting occasionally with remaining marinade.
