Delicious delicious baked honey bbq popcorn chicken recipe recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1.5 lbs Boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup Yellow popcorn kernels, unpopped
  • 1/2 cup All-purpose flour
  • 2 large Eggs, beaten
  • 1/2 cup Honey
  • 1/4 cup BBQ sauce
  • 1 tablespoon Olive oil
  • 1 teaspoon Garlic powder

Instructions

  1. Step 1: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Step 2: Place popcorn kernels in a food processor or blender and pulse until finely ground into a coarse flour.
  3. Step 3: In a shallow dish, combine the ground popcorn with all-purpose flour and garlic powder. In another shallow dish, add the beaten eggs.
  4. Step 4: Dip each piece of chicken into the egg, then dredge thoroughly in the popcorn flour mixture, pressing to adhere. Place coated chicken pieces on the prepared baking sheet.
  5. Step 5: In a small bowl, whisk together honey, BBQ sauce, and olive oil. Brush the honey BBQ mixture evenly over the popcorn chicken.
  6. Step 6: Bake for 20-25 minutes, or until the chicken is cooked through and the popcorn coating is golden brown.

Notes

  • For extra crispy popcorn chicken, lightly spray the coated chicken with cooking oil before baking.
  • Leftover baked popcorn chicken can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the oven or an air fryer to maintain crispiness, rather than microwaving.
  • Serve with a side of coleslaw or a creamy dipping sauce like ranch or blue cheese for a complete meal.
