- 1.5 lbs Boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 cup Yellow popcorn kernels, unpopped
- 1/2 cup All-purpose flour
- 2 large Eggs, beaten
- 1/2 cup Honey
- 1/4 cup BBQ sauce
- 1 tablespoon Olive oil
- 1 teaspoon Garlic powder
Instructions
- Step 1: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Step 2: Place popcorn kernels in a food processor or blender and pulse until finely ground into a coarse flour.
- Step 3: In a shallow dish, combine the ground popcorn with all-purpose flour and garlic powder. In another shallow dish, add the beaten eggs.
- Step 4: Dip each piece of chicken into the egg, then dredge thoroughly in the popcorn flour mixture, pressing to adhere. Place coated chicken pieces on the prepared baking sheet.
- Step 5: In a small bowl, whisk together honey, BBQ sauce, and olive oil. Brush the honey BBQ mixture evenly over the popcorn chicken.
- Step 6: Bake for 20-25 minutes, or until the chicken is cooked through and the popcorn coating is golden brown.
Notes
- For extra crispy popcorn chicken, lightly spray the coated chicken with cooking oil before baking.
- Leftover baked popcorn chicken can be stored in an airtight container in the refrigerator for up to 3 days.
- Reheat in the oven or an air fryer to maintain crispiness, rather than microwaving.
- Serve with a side of coleslaw or a creamy dipping sauce like ranch or blue cheese for a complete meal.
