Ingredients
Scale
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 4 large eggs
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 cup hazelnut flour
- 1 cup chopped hazelnuts
- 1 cup heavy cream
- ½ cup powdered sugar
- ¼ cup hazelnut liqueur (optional)
Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease and flour three 9-inch round cake pans. Whisk together flour, granulated sugar, baking powder, baking soda, and salt in a large bowl.
- Step 2: In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then stir in the vanilla extract. In a small bowl, gently whisk together the buttermilk and hazelnut flour until smooth.
- Step 3: Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk mixture, beginning and ending with the dry ingredients. Mix until just combined. Fold in the chopped hazelnuts. Divide the batter evenly among the prepared cake pans.
- Step 4: Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
- Step 5: While the cakes are cooling, whip the heavy cream with the powdered sugar and hazelnut liqueur (if using) until stiff peaks form.
- Step 6: Once the cakes are completely cool, frost the layers with the whipped cream, stacking them on top of each other. Frost the entire cake with the remaining whipped cream. Garnish with extra chopped hazelnuts, if desired.
Notes
- Store leftover cake in an airtight container in the refrigerator for up to 3 days, its moistness will be beautifully preserved.
- For a delightful warm-cake experience, gently reheat individual slices in the microwave for 10-15 seconds.
- Serve this decadent cake with a scoop of vanilla bean ice cream or a side of strong, freshly brewed coffee to elevate the hazelnut flavor.
- To achieve extra-fluffy layers, make sure your butter is truly softened and your eggs are at room temperature before creaming them together.
