Savory onion slices meet sharp Parmesan and smoky paprika for the ultimate crispy snack! These baked crisps deliver intense flavor and satisfying crunch.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

  • Large Yellow Onion: 1, thinly sliced (about 1/8 inch thick)
  • Parmesan Cheese: 1 cup, finely grated
  • All-Purpose Flour: 2 tablespoons
  • Garlic Powder: 1 teaspoon
  • Smoked Paprika: 1/2 teaspoon
  • Kosher Salt: 1/2 teaspoon
  • Freshly Ground Black Pepper: 1/4 teaspoon

Instructions

  1. Step 1: Preheat the oven to 375°F (190°C). Line a large baking sheet with parchment paper or a silicone baking mat; this is critical for preventing sticking.
  2. Step 2: In a medium bowl, thoroughly toss the thinly sliced onions with the Parmesan cheese, flour, garlic powder, paprika, salt, and pepper until the onions are evenly coated and separated.
  3. Step 3: Scoop tablespoon-sized clusters of the coated onion mixture onto the prepared baking sheet, leaving at least 1 inch of space between each cluster. Press down gently on each mound to flatten it into a thin disk.
  4. Step 4: Bake for 12 to 15 minutes, or until the edges of the crisps are deeply golden brown and the cheese has melted and firmed up. For maximum crunch, reduce the temperature to 300°F (150°C) and bake for an additional 5 minutes until the centers look completely dry.
  5. Step 5: Remove the baking sheet from the oven and immediately transfer the onion crisps to a wire cooling rack. Allow them to cool completely at room temperature; they will achieve their signature crunch as they cool.

Notes

  • Store cooled crisps in an airtight container at room temperature; adding a small piece of paper towel can help absorb residual moisture and maintain crunchiness for up to 3 days.
  • If the crisps lose their snap, flash-reheat them on a baking sheet in a 300°F oven for 3 to 5 minutes, then cool fully on the wire rack before serving.
  • These savory crisps are excellent served alongside a creamy tomato soup or used as a crunchy, gluten-free base for appetizers like herbed goat cheese and chives.
  • For the best texture, ensure your Parmesan is very finely grated and that the thinly sliced onions are completely separated before mixing; this aids in an even coating for maximum structural integrity.
