Instructions

  1. Step 1: Season the chicken thighs generously with salt, pepper, and 1 teaspoon of the dried herbs. Heat the olive oil in a large, oven-safe skillet over medium-high heat. Sear the chicken for 3-4 minutes per side until golden brown, then remove and set aside on a clean plate.
  2. Step 2: Reduce the heat to medium. Add the minced garlic and the remaining dried herbs to the skillet. Cook for 30 seconds until fragrant. Add the rinsed Basmati rice and stir continuously for 1 minute to toast the grains slightly.
  3. Step 3: Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Bring the mixture to a boil, then immediately return the seared chicken thighs to the skillet, nesting them into the liquid and rice mixture.
  4. Step 4: Cover the skillet tightly with a lid or foil, reduce the heat to low, and simmer for 18–20 minutes, or until all the liquid has been absorbed, the rice is tender, and the chicken is fully cooked (internal temperature of 165°F).
  5. Step 5: Remove the skillet from the heat. Stir in the heavy cream until the rice mixture is fully combined and the sauce becomes creamy. Cover and let stand for 5 minutes before serving to allow the flavors to meld and the sauce to thicken further.
