- 4 boneless, skinless chicken breasts (about 6–8 oz each)
- 4 ounces Brie cheese, rind removed, cut into 4 equal pieces
- 1/4 cup whole cranberry sauce or preserves
- 2 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
Instructions
- Step 1: Preheat oven to 400°F (200°C). Prepare the chicken by slicing a deep horizontal pocket into the thickest side of each breast, being careful not to cut all the way through, creating a pouch for the stuffing.
- Step 2: Carefully stuff each chicken pocket. Place one piece of Brie cheese and approximately one tablespoon of cranberry sauce inside each breast. Secure the opening tightly with two or three wooden toothpicks to prevent the filling from escaping while cooking.
- Step 3: In a small bowl, combine the olive oil, salt, pepper, and thyme. Brush the seasoned oil mixture evenly over the outside of the stuffed chicken breasts.
- Step 4: Heat an oven-safe skillet (cast iron preferred) over medium-high heat. Sear the chicken breasts for 2-3 minutes per side until they are golden brown. Transfer the skillet immediately to the preheated oven.
- Step 5: Bake for 18 to 22 minutes, or until the internal temperature of the chicken reaches 165°F (74°C). Remove the chicken from the oven, let it rest for 5 minutes, and remove the toothpicks before serving.
Notes
- Store any leftovers tightly wrapped in the refrigerator for up to 3 days; the Brie filling is best consumed sooner rather than later.
- Reheat leftover chicken covered loosely in foil at 325°F (160°C) for a gentle warming that prevents the breast from drying out.
- Present this festive dish alongside simple roasted green beans and a scoop of wild rice to balance the rich, sweet filling.
- To ensure minimal filling escape during searing, use three toothpicks to secure the stuffing pocket, placing one directly in the center and one on either side of the main opening.
