Ingredients
- Plain flour: 225g
- Caster sugar: 110g
- Butter: 175g, cold and cubed
- Instant coffee powder: 2 tbsp
- Boiling water: 2 tbsp
- Icing sugar: 150g
- Hot water: 1-2 tbsp (for icing)
- Desiccated coconut: 25g (optional, for topping)
Instructions
- Step 1: Preheat oven to 180°C (160°C fan/Gas Mark 4). Grease and line a 20cm square baking tin with baking paper.
- Step 2: In a large bowl, rub the butter into the flour until the mixture resembles breadcrumbs. Stir in the caster sugar.
- Step 3: Press the mixture evenly into the prepared baking tin and bake for 20-25 minutes, or until golden brown. Let it cool completely in the tin.
- Step 4: While the base cools, dissolve the coffee powder in the boiling water.
- Step 5: Gradually add the coffee mixture and hot water (1 tbsp at a time) to the icing sugar, mixing well until you have a smooth, spreadable icing.
- Step 6: Spread the icing evenly over the cooled base. Sprinkle with desiccated coconut, if using. Let the icing set before cutting into squares or slices.
Notes
- Store the coffee slice in an airtight container at room temperature for up to 3 days to maintain its texture.
- A quick zap in the microwave for 5-10 seconds will slightly soften the icing if you prefer a gooey texture.
- Serve this coffee slice with a dollop of freshly whipped cream or a scoop of vanilla ice cream for an extra-indulgent treat.
- For an even richer coffee flavor, try adding a teaspoon of coffee essence to the icing along with the coffee mixture.
