Ingredients
- Heavy cream: 2 cups
- Whole milk: 1 cup
- Granulated sugar: 1/2 cup
- Vanilla extract: 1 teaspoon
- Gelatin powder: 2 1/4 teaspoons
- Cold water: 3 tablespoons
- Pinch of salt: 1/8 teaspoon
- Fresh berries: for serving
Instructions
- Step 1: In a small bowl, sprinkle the gelatin powder over the cold water and let it soften for 5-10 minutes. This is called blooming the gelatin.
- Step 2: In a saucepan, combine the heavy cream, whole milk, sugar, and salt. Heat over medium heat, stirring occasionally, until the sugar is dissolved and the mixture is steaming, but not boiling.
- Step 3: Remove the saucepan from the heat and stir in the bloomed gelatin until it is completely dissolved. Add the vanilla extract and stir to combine.
- Step 4: Strain the panna cotta mixture through a fine-mesh sieve into a pitcher or bowl. This will remove any undissolved gelatin or solids.
- Step 5: Pour the panna cotta mixture into individual ramekins or glasses. Cover with plastic wrap, pressing the wrap directly onto the surface to prevent a skin from forming.
- Step 6: Refrigerate for at least 4 hours, or preferably overnight, until the panna cotta is firm and set. To serve, gently unmold the panna cotta (if desired) and top with fresh berries.
Notes
- Store your panna cotta in the refrigerator for up to 3 days, keeping it well-covered.
- Gently warm unmolded panna cotta very briefly in the microwave, just until softened, not melted.
- Garnish your panna cotta with a drizzle of honey or a sprinkle of toasted nuts in addition to fresh berries.
- Be careful not to let the cream mixture boil, as this can affect the final texture and flavor of your panna cotta.
