Ingredients
Scale
- 2 cups heavy cream
- 1 cup whole milk
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 teaspoons unflavored gelatin powder
- ¼ cup cold water
- Berry coulis or caramel sauce (for serving, optional)
Instructions
- Step 1: Bloom the gelatin: In a small bowl, sprinkle the gelatin powder over the cold water. Let it sit for 5-7 minutes to soften.
- Step 2: Heat the cream mixture: In a medium saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium heat, stirring occasionally, until the sugar dissolves and the mixture is just simmering (do not boil).
- Step 3: Incorporate gelatin: Remove the saucepan from the heat. Add the bloomed gelatin to the warm cream mixture and stir until it is completely dissolved. Stir in the vanilla extract.
- Step 4: Pour and chill: Pour the mixture into individual serving ramekins or glasses. Cover and refrigerate for at least 4 hours, or preferably overnight, until the panna cotta is set.
- Step 5: Serve: Once set, gently run a thin knife around the edges of the panna cotta to loosen it from the ramekins. Invert onto serving plates. Serve chilled, optionally topped with berry coulis or caramel sauce.
Notes
- Store leftover panna cotta in the refrigerator for up to 3 days, covering it tightly to prevent it from absorbing other refrigerator odors.
- For a perfectly smooth texture when reheating, gently microwave individual portions for short intervals, stirring in between, until warmed through.
- Elevate your panna cotta by serving it with fresh berries and a sprinkle of crunchy toasted nuts for a delightful textural contrast.
- To ensure the gelatin dissolves completely, make sure the cream mixture is warm but not boiling; a slightly lower temperature will prevent scorching and ensure a silky-smooth final product.
