  • 1 cup confectioners' sugar
  • 24 tablespoons milk

Instructions

  1. Step 1: In a large bowl, combine warm milk, yeast, and granulated sugar. Let stand for 5-10 minutes until foamy. Whisk in the egg and melted butter.
  2. Step 2: Gradually add flour and salt to the yeast mixture, mixing with a wooden spoon or your hands until a soft dough forms. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, until smooth and elastic. Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size.
  3. Step 3: While the dough is rising, prepare the cinnamon filling. In a small bowl, combine brown sugar and cinnamon.
  4. Step 4: Punch down the risen dough and roll it out into a 12×18 inch rectangle. Spread the softened butter evenly over the dough. Sprinkle the cinnamon-sugar mixture evenly over the butter. Tightly roll the dough up from the long side into a log.
  5. Step 5: Cut the log into 12 equal slices. Shape each slice into a bunny: gently stretch the bottom of the slice to create the bunny's body, then create the ears by pulling up and slightly pinching the top of the slice into two points.
  6. Step 6: Place the shaped bunnies onto a baking sheet lined with parchment paper. Let rise for another 20-30 minutes. Bake at 375°F (190°C) for 15-20 minutes, or until golden brown.
  7. Step 7: While the bunnies are baking, prepare the icing. Whisk together confectioners' sugar and milk until smooth, adding more milk as needed to reach desired consistency.
