- 1 cup warm milk (105-115°F)
- 2 1/4 teaspoons active dry yeast
- 1/4 cup granulated sugar
- 1 large egg
- 1/4 cup unsalted butter, melted
- 3 1/2 cups all-purpose flour, plus more for dusting

- 1 teaspoon ground cinnamon
- 1/2 cup packed light brown sugar
- 1/4 cup unsalted butter, softened
- 1 cup confectioners' sugar
- 2–4 tablespoons milk
Instructions
- Step 1: In a large bowl, combine warm milk, yeast, and granulated sugar. Let stand for 5-10 minutes until foamy. Whisk in the egg and melted butter.
- Step 2: Gradually add flour and salt to the yeast mixture, mixing with a wooden spoon or your hands until a soft dough forms. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, until smooth and elastic. Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size.
- Step 3: While the dough is rising, prepare the cinnamon filling. In a small bowl, combine brown sugar and cinnamon.
- Step 4: Punch down the risen dough and roll it out into a 12×18 inch rectangle. Spread the softened butter evenly over the dough. Sprinkle the cinnamon-sugar mixture evenly over the butter. Tightly roll the dough up from the long side into a log.
- Step 5: Cut the log into 12 equal slices. Shape each slice into a bunny: gently stretch the bottom of the slice to create the bunny's body, then create the ears by pulling up and slightly pinching the top of the slice into two points.
- Step 6: Place the shaped bunnies onto a baking sheet lined with parchment paper. Let rise for another 20-30 minutes. Bake at 375°F (190°C) for 15-20 minutes, or until golden brown.
- Step 7: While the bunnies are baking, prepare the icing. Whisk together confectioners' sugar and milk until smooth, adding more milk as needed to reach desired consistency.
- Step 8: Once the bunnies are cooled slightly, drizzle with icing.
Notes
- Store leftover Cinnamon Roll Bunnies in an airtight container at room temperature for up to 2 days, or freeze for longer storage.
- For perfectly warmed-through bunnies, reheat them gently in the microwave for 10-15 seconds, or bake them for a few minutes at 350°F until heated through.
