Ingredients

  • All-purpose flour: 3 1/2 cups
  • Active dry yeast: 2 1/4 teaspoons (1 packet)

  • Eggs: 2 large
  • Unsalted butter, melted: 1/4 cup
  • Dried cranberries: 1/2 cup
  • Orange zest: 1 tablespoon

Instructions

  1. Step 1: In a large bowl, dissolve yeast and 1 teaspoon of sugar in warm milk. Let stand for 5-10 minutes until foamy.
  2. Step 2: Add the remaining sugar, melted butter, eggs, and salt to the yeast mixture. Mix well.
  3. Step 3: Gradually add the flour, 1 cup at a time, mixing until a shaggy dough forms. Turn the dough out onto a lightly floured surface and knead for 6-8 minutes, or until smooth and elastic. Incorporate the cranberries and orange zest during the last minute of kneading.
  4. Step 4: Place the dough in a lightly greased bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  5. Step 5: Punch down the dough and shape it into a round loaf. Place it on a baking sheet lined with parchment paper. Cover and let rise for another 30-45 minutes.
  6. Step 6: Preheat oven to 350°F (175°C). Bake for 30-35 minutes, or until the loaf is golden brown and sounds hollow when tapped. Let cool on a wire rack before slicing and serving.
