Instructions
- Step 1: Finely chop the semi-sweet chocolate chips and set aside.
- Step 2: In a medium saucepan, heat the heavy cream over medium heat until it just begins to simmer (small bubbles around the edges). Do not boil.
- Step 3: Remove the cream from the heat and immediately pour it over the chopped chocolate chips. Let it sit for about 1 minute to allow the chocolate to soften.
- Step 4: Gently whisk the cream and chocolate together until smooth and glossy. Stir in the butter, corn syrup (if using), and vanilla extract until fully incorporated.
- Step 5: If the ganache is too thick, add a teaspoon or two of heavy cream until you reach your desired consistency. If it's too thin, add powdered sugar, one tablespoon at a time, until it thickens. Stir in a pinch of sea salt (optional).
- Step 6: Let the ganache cool slightly before using. It will thicken as it cools.
