Instructions

  1. Step 1: In a medium saucepan, whisk together the heavy cream, milk, sugar, cocoa powder, and salt. Cook over medium heat, stirring constantly, until the mixture is just simmering. Do not boil.
  2. Step 2: In a separate bowl, whisk the egg yolks lightly. Slowly temper the hot cream mixture into the egg yolks, whisking constantly to prevent the eggs from scrambling.
  3. Step 3: Pour the tempered egg yolk mixture back into the saucepan. Cook over low heat, stirring constantly with a spatula, until the custard thickens enough to coat the back of the spatula (about 5-7 minutes). Do not boil.
  4. Step 4: Remove the custard from the heat and stir in the vanilla extract and optional chopped dark chocolate. Strain the custard through a fine-mesh sieve into a bowl to remove any lumps.
  5. Step 5: Cover the custard with plastic wrap, pressing the wrap directly onto the surface to prevent a skin from forming. Refrigerate for at least 4 hours, or preferably overnight, to chill completely.
  6. Step 6: Once chilled, churn the custard in an ice cream maker according to the manufacturer's instructions. Once churned, transfer to an airtight container and freeze for at least 2 hours to harden further before serving.
