- 2 cups heavy cream
- 1 cup whole milk
- ¾ cup granulated sugar
- ½ cup unsweetened cocoa powder
- ¼ teaspoon salt
- 4 large egg yolks
- 1 teaspoon vanilla extract
- 1 ounce good quality dark chocolate, finely chopped (optional)
Instructions
- Step 1: In a medium saucepan, whisk together the heavy cream, milk, sugar, cocoa powder, and salt. Cook over medium heat, stirring constantly, until the mixture is just simmering. Do not boil.
- Step 2: In a separate bowl, whisk the egg yolks lightly. Slowly temper the hot cream mixture into the egg yolks, whisking constantly to prevent the eggs from scrambling.
- Step 3: Pour the tempered egg yolk mixture back into the saucepan. Cook over low heat, stirring constantly with a spatula, until the custard thickens enough to coat the back of the spatula (about 5-7 minutes). Do not boil.
- Step 4: Remove the custard from the heat and stir in the vanilla extract and optional chopped dark chocolate. Strain the custard through a fine-mesh sieve into a bowl to remove any lumps.
- Step 5: Cover the custard with plastic wrap, pressing the wrap directly onto the surface to prevent a skin from forming. Refrigerate for at least 4 hours, or preferably overnight, to chill completely.
- Step 6: Once chilled, churn the custard in an ice cream maker according to the manufacturer's instructions. Once churned, transfer to an airtight container and freeze for at least 2 hours to harden further before serving.

- Store leftover ice cream in an airtight container in the freezer for up to 2 weeks for best quality.
- For a warmer, decadent treat, let the ice cream soften slightly at room temperature before serving, or briefly microwave small portions in a microwave-safe bowl.
