Ingredients
- Cooked chicken breast, 1 cup, diced
- Ramen noodles (discard seasoning packet), 1 package (3 oz)
- Broccoli florets, 1 cup
- Carrots, 1/2 cup, sliced
- Soy sauce, 1/4 cup
- Sesame oil, 1 tablespoon
- Honey or brown sugar, 1 tablespoon
- Garlic, 2 cloves, minced
- Green onions, 2 stalks, chopped (for garnish)
Instructions
- Step 1: Heat sesame oil in a large wok or skillet over medium-high heat. Add minced garlic and stir-fry for 30 seconds until fragrant.
- Step 2: Add diced chicken and stir-fry for 2-3 minutes until heated through.
- Step 3: Add broccoli and carrots to the wok. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
- Step 4: Add cooked ramen noodles to the wok. Pour soy sauce and honey/brown sugar over the noodles and chicken/vegetable mixture. Stir-fry for 2-3 minutes, until the noodles are heated through and coated in the sauce.
- Step 5: Serve immediately, garnished with chopped green onions.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat gently in a microwave or skillet to avoid overcooking the noodles and making them mushy.
- Serve this flavorful stir-fry over a bed of steamed rice for a heartier and more satisfying meal.
- For extra depth of flavor, add a pinch of red pepper flakes to the stir-fry during step 4.
