Instructions
- Step 1: Cook the rotini pasta according to package directions. Drain and set aside.
- Step 2: Heat olive oil in a large skillet over medium-high heat. Add the chicken and Cajun seasoning. Cook until chicken is cooked through and lightly browned, about 5-7 minutes.
- Step 3: Add the minced garlic to the skillet and cook for 1 minute, until fragrant.
- Step 4: Pour in the chicken broth and heavy cream. Bring to a simmer and cook for 2-3 minutes, allowing the sauce to slightly thicken.
- Step 5: Stir in the cooked rotini pasta and 1 cup of cheddar cheese. Stir until the cheese is melted and everything is well combined.
- Step 6: Top with the remaining 1/2 cup of cheddar cheese and cover the skillet. Let it sit for a minute or two until the cheese is melted. Serve immediately.
