- 1 head of broccoli, finely chopped
- 1 cup grated cheddar cheese
- 1/2 cup all-purpose flour
- 1/4 cup breadcrumbs
- 1 large egg, lightly beaten
- 1/4 cup milk
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Step 1: Steam or blanch the broccoli florets until tender-crisp, about 5-7 minutes. Drain well and let cool slightly. Roughly chop the broccoli into smaller pieces.
- Step 2: In a large bowl, combine the cooked broccoli, grated cheddar cheese, flour, breadcrumbs, egg, milk, garlic powder, salt, and pepper. Mix thoroughly until all ingredients are well combined.
- Step 3: Heat about 1/4 inch of oil in a large skillet over medium heat.
- Step 4: Drop spoonfuls of the broccoli mixture into the hot oil, flattening them slightly with the back of a spoon to form patties.
- Step 5: Cook the fritters for 2-3 minutes per side, or until golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
- Step 6: Serve immediately and enjoy! These are delicious on their own or with a dipping sauce of your choice (sour cream, ranch dressing, etc.).
Notes
- Store leftover fritters in an airtight container in the refrigerator for up to 3 days.
- For perfectly crispy reheated fritters, air fry them at 375°F for 5 minutes, flipping halfway.
- Serve these cheesy delights alongside a vibrant tomato salsa for a flavour explosion.
- To prevent soggy fritters, ensure the broccoli is thoroughly drained before adding it to the mixture.
