Instructions
- Step 1: Combine apples, granulated sugar, brown sugar, apple cider vinegar, water, cinnamon, nutmeg, and lemon juice in a large saucepan over medium heat. Bring to a boil, stirring occasionally, until the sugars dissolve.
- Step 2: Reduce heat to low and simmer, uncovered, for 30-40 minutes, stirring frequently, until the apples are very soft and the mixture has thickened to a jam-like consistency. A spoon drawn across the bottom of the pan should leave a clear trail that doesn't immediately fill in.
- Step 3: Remove from heat and let the jam cool slightly (about 15 minutes). This will allow the jam to thicken further.
- Step 4: Carefully ladle the hot jam into sterilized jars, leaving about 1/4 inch headspace at the top. Wipe the rims of the jars clean.
- Step 5: Seal the jars with lids and rings. Process in a boiling water bath for 10 minutes (adjust processing time based on your altitude – consult a canning guide for specifics).
- Step 6: Remove jars from the water bath and let them cool completely. You should hear a "pop" sound as the jars seal. Check to ensure all jars have sealed properly. Store in a cool, dark place.
