Instructions

  1. Step 1: Season steak cubes generously with Cajun seasoning. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear steak cubes on all sides until browned, about 3-4 minutes per side. Remove steak from skillet and set aside.
  2. Step 2: Reduce heat to medium. Add butter to the skillet and melt. Add minced garlic and cook for 1 minute, or until fragrant, being careful not to burn the garlic.
  3. Step 3: Pour in heavy cream and bring to a simmer. Stir in cheddar and Monterey Jack cheeses until melted and smooth. Season with salt and pepper to taste.
