Ingredients
Scale
- 1 ½ cups all-purpose flour
- ½ cup powdered sugar
- ½ teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup shelled pistachios, roughly chopped
- 2 cups fresh blackberries
- ½ cup granulated sugar
- ½ cup milk chocolate chips
Instructions
- Step 1: Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides to lift the finished bars out easily.
- Step 2: In a medium bowl, whisk together flour, powdered sugar, and salt. Cut in the softened butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Stir in the chopped pistachios.
- Step 3: Press half of the crumb mixture evenly into the prepared baking pan. Arrange the fresh blackberries in a single layer over the crust. Sprinkle with granulated sugar.
- Step 4: Crumble the remaining crumb mixture evenly over the blackberries.
- Step 5: Bake for 30-35 minutes, or until the crust is golden brown and the blackberries are bubbling.
- Step 6: Let the bars cool completely in the pan before sprinkling with milk chocolate chips. Once the chocolate is melted (you can gently warm the pan if needed) use a spatula to spread the chocolate evenly. Allow the chocolate to set completely before cutting into bars and serving.
Notes
- Store these dreamy bars in an airtight container at room temperature for up to 3 days, or freeze for longer enjoyment.
- For a warm, gooey experience, gently reheat individual bars for 15-20 seconds in the microwave.
- Serve these bars slightly chilled for the perfect balance of crisp crust and juicy blackberry filling, alongside a scoop of vanilla ice cream for extra indulgence.
- To prevent the blackberries from sinking into the bottom crust, try gently tossing them in a tablespoon of flour before arranging them on the base.
