- Arugula: 5 ounces
- Fresh Blackberries: 1 cup
- Fresh Peaches: 2, pitted and sliced
- Red Onion: 1/4, thinly sliced
- Goat Cheese: 4 ounces, crumbled
- Lime Juice: 2 tablespoons
- Honey: 1 tablespoon
- Olive Oil: 3 tablespoons
Instructions
- Step 1: In a small bowl, whisk together lime juice, honey, and olive oil. This is your honey-lime dressing. Taste and adjust sweetness or acidity as needed.
- Step 2: In a large bowl, combine the arugula, blackberries, peach slices, and red onion.
- Step 3: Gently toss the salad ingredients together.
- Step 4: Drizzle the honey-lime dressing over the salad. Use as much or as little as you prefer.
- Step 5: Sprinkle the crumbled goat cheese over the salad.

- To prevent wilting, dress only the portion of salad you intend to eat immediately and store the rest undressed.
