- Cottage cheese 1 cup (226g), low-fat or full-fat
- Large eggs 3 large
- Cream of tartar 1/4 teaspoon
- Everything bagel seasoning 1-2 teaspoons (optional)
- Garlic powder 1/4 teaspoon (optional)
- Onion powder 1/4 teaspoon (optional)

Instructions
- Step 1: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Step 2: Separate the eggs, placing the egg whites into a clean, grease-free bowl and the egg yolks into a separate bowl.
- Step 3: In the bowl with the egg whites, add the cream of tartar. Beat with an electric mixer on high speed until stiff peaks form. This may take several minutes.
- Step 4: In the bowl with the egg yolks, add the cottage cheese, garlic powder, onion powder and salt (if using). Mix well with a fork or hand mixer until smooth.
- Step 5: Gently fold the cottage cheese mixture into the egg whites, being careful not to deflate the whites. Work in batches for best results.
- Step 6: Spoon the mixture into 4 equal-sized mounds onto the prepared baking sheet. Sprinkle with everything bagel seasoning, if desired.
- Step 7: Bake for 30-40 minutes, or until the cloud bread is golden brown and set. Let cool completely on the baking sheet before serving. The centers may sink a bit as they cool.

- Store leftover cloud bread in an airtight container in the refrigerator for up to 3 days to maintain its texture.
- For a warm and fluffy texture, gently reheat the cloud bread in a low oven (250°F) for a few minutes, being careful not to overbake.
