Ingredients
Scale
- 1 cup warm milk (105-115°F)
- 2 ¼ teaspoons active dry yeast
- ¼ cup granulated sugar
- 1 large egg
- 4 tablespoons unsalted butter, melted
- 1 teaspoon salt
- 3 ½ cups all-purpose flour, plus more for dusting
- 1 cup mashed ripe bananas (about 3 medium)
- ½ cup chopped walnuts or pecans
- 2 teaspoons ground cinnamon
- ¼ cup brown sugar
- 6 tablespoons unsalted butter, softened
Instructions
- Step 1: In a large bowl, combine warm milk, yeast, and granulated sugar. Let stand for 5-10 minutes until foamy. Whisk in the egg and melted butter.
- Step 2: Add salt and 2 cups of flour to the yeast mixture. Beat with a wooden spoon or mixer until smooth. Gradually add the remaining flour, mixing until a soft dough forms. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
- Step 3: In a separate bowl, combine mashed bananas, chopped nuts, cinnamon, and brown sugar.
- Step 4: Roll the dough into a 12×18 inch rectangle. Spread the softened butter evenly over the dough. Sprinkle the banana-nut mixture evenly over the buttered dough. Tightly roll the dough up from the long side into a log. Cut the log into 12 equal slices.
- Step 5: Place the rolls in a greased 9×13 inch baking pan. Cover loosely with plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
- Step 6: Preheat oven to 375°F (190°C). Bake for 20-25 minutes, or until golden brown. Let cool slightly before serving.
Notes
- Store leftover rolls in an airtight container at room temperature for up to 2 days, or freeze them for longer storage.
- For a warm, gooey treat, reheat individual rolls in the microwave for 15-20 seconds or in a toaster oven until heated through.
- Serve these Banana Nut Cinnamon Rolls warm with a drizzle of maple syrup or a scoop of vanilla ice cream for an extra special treat.
- To prevent sticking, ensure your baking pan is well-greased and that you use plenty of flour when kneading the dough.
