Ingredients
Scale
- 1 lb large prawns, peeled and deveined
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1/4 cup crumbled feta cheese
- 2 lemons, one juiced, one thinly sliced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- Salt and freshly ground black pepper to taste
Instructions
- Step 1: Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
- Step 2: In a bowl, whisk together the olive oil, minced garlic, lemon juice, salt, and pepper.
- Step 3: Add the prawns to the bowl and toss gently to coat them evenly in the marinade.
- Step 4: Arrange the marinated prawns in the prepared baking dish. Top each prawn with a small piece of feta cheese and a slice of lemon. Sprinkle with chopped parsley and dill.
- Step 5: Bake for 10-12 minutes, or until the prawns are pink and cooked through. Do not overcook.
- Step 6: Serve immediately. The baked prawns are delicious on their own or served over rice, pasta, or couscous.
Notes
- Store leftover prawns in an airtight container in the refrigerator for up to 2 days.
- For reheating, gently warm the prawns in a skillet over medium-low heat, adding a splash of water or white wine to prevent drying out.
- Serve these zesty prawns atop a bed of creamy orzo pasta for a complete and satisfying Mediterranean-inspired meal.
- To enhance the garlic flavor, lightly toast the minced garlic in the olive oil for 30 seconds before adding the lemon juice.
