Instructions

  1. Step 1: Preheat oven to 400°F (200°C). Wash and cut potatoes into halves or quarters, depending on their size. Ensure pieces are roughly the same size for even cooking.
  2. Step 2: In a large bowl, toss the potatoes with olive oil, minced garlic, oregano, rosemary, red pepper flakes (if using), salt, and pepper. Make sure the potatoes are evenly coated.
