Ingredients
- Boneless, skinless chicken breasts: 2 large
- Brie cheese: 4 oz, rind removed, cubed
- Apple: 1 medium, peeled, cored, and diced
- Maple syrup: 2 tablespoons
- Dijon mustard: 1 tablespoon
- Olive oil: 1 tablespoon
- Fresh thyme: 1 teaspoon, chopped
- Salt and pepper: to taste
Instructions
- Step 1: Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Step 2: Cut a deep pocket horizontally into the side of each chicken breast, being careful not to cut all the way through.
- Step 3: In a small bowl, combine the cubed Brie cheese and diced apple. Stuff each chicken breast with half of the Brie and apple mixture.
- Step 4: In another small bowl, whisk together the maple syrup, Dijon mustard, olive oil, chopped thyme, salt, and pepper to create the glaze.
- Step 5: Place the stuffed chicken breasts in the prepared baking dish. Brush each chicken breast with the maple Dijon glaze.
- Step 6: Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). Let rest for 5 minutes before serving.

- Store leftover chicken in an airtight container in the refrigerator for up to 3 days.
- Reheat the stuffed chicken gently in the oven or microwave to prevent the Brie from melting excessively and becoming too runny.
- Serve the chicken with a side of roasted vegetables or a crisp green salad to complement the rich flavors.
- For easier stuffing, chill the Brie and apple mixture for 15 minutes before filling the chicken breasts.
