- 1 box (15.25 ounces) white cake mix
- 1 box (3.4 ounces) instant vanilla pudding mix
- 4 large eggs
- 1/2 cup vegetable oil
- 1 cup water
- 1 cup (2 sticks) unsalted butter, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
- Pink and white food coloring gel
- Mini chocolate chips
- Marshmallow
- Pink candy melts
Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. Prepare cake batter according to box instructions, using the pudding mix in place of the pudding specified on the cake mix box. Divide batter evenly between prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cakes cool completely in pans before inverting onto wire racks to cool further.
- Step 2: Once cakes are completely cool, level the tops of the cakes with a serrated knife if needed to create flat surfaces. Using a butter knife, frost the top of one cake layer with a thin layer of frosting (made from the softened butter, powdered sugar, and vanilla extract) Then top with the second cake layer.
- Step 3: Frost the entire cake with remaining frosting. Tint about 1/3 of the frosting pink using pink food coloring gel. Using a piping bag or a ziplock bag with a corner snipped off, pipe a swirl design along the bottom edge of the cake to mimic a bunny's ruff.
- Step 4: Use mini chocolate chips to create bunny eyes and nose. Cut a small marshmallow in half for the bunny's inner ears and attach it on top using a small amount of frosting. Melt pink candy melts according to package instructions and use it to create the bunny ears by piping two long oval shapes on top of the marshmallow ears. Let the candy melts set before carefully placing the bunny's ears on top of the marshmallow.
- Step 5: Optional: Add additional decorations such as sprinkles or edible flowers. Let the frosting set completely before serving.
Notes
- Store leftover cake in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 5 days.
- For a refreshingly moist slice, gently microwave individual servings for 10-15 seconds.
